    Cilantro-Lime Chicken with Avocado Salsa

    There are a lot of ways to prepare chicken – from the type of marinade to use to the cooking method; this protein offers so many variations that it’s no wonder it is a staple of most Paleo dieters.

    Cilantro-Lime Chicken With Avocado Salsa

    In this creative recipe, we bring out the spicier side of chicken with a Mexican-themed dish. Here, you’ll be marinating your chicken in a simple cilantro oil and topping your cooked chicken with homemade avocado salsa.

    Despite the delicious result, the prep time for this chicken dish is shockingly low - just about 20 minutes. This recipe leaves no excuse for taking a fast-food cheat night, no matter how hectic things are.

    As written, this recipe will have a distinctively tangy flavor, making it not too hot but certainly not bland. If you’re the type that prefers to up the heat in your meal, a great idea is adding some diced peppers to your marinade or salsa.

    While peppers might best be known for their spicy quality, they also are a great Paleo food and contain a ton of micronutrients that add value to your meal beyond taste. There are hundreds of varieties of peppers, so choose the ones that fit your heat preferences, going with fresh whenever possible.

    This main chicken course works best when served alongside another Mexican-themed side dish. For a great Paleo option, try these chipotle-glazed sweet potato fries – they’re a great, kid-friendly option, and you can dip them in any leftover salsa you might have.

    Cilantro-Lime Chicken With Avocado Salsa Recipe

    Ingredients

    • 4 skinless, boneless chicken breasts
    • 3 tbsp. olive oil
    • 4 tbsp. chopped cilantro
    • 3 garlic cloves, crushed
    • 3 tbsp. lime juice
    • 1 tsp. salt

    Avocado Salsa Ingredients

    • 1 cup cherry tomatoes, chopped
    • 1 avocado, cubed
    • 1 red onion, finely chopped
    • 1 jalapeño, finely chopped
    • Small handful of cilantro leaves
    • 1 tbsp. olive oil
    • 1-2 tbsp. lime juice, to taste
    • Salt to taste

    Preparation

    1. Combine the olive oil, chopped cilantro, garlic, lime juice, and salt and pour over the chicken. Allow marinating for 5-10 minutes.
    2. Cook the chicken in a hot pan until cooked through, about 5-7 minutes on each side. Remove from heat and allow to rest for 5 minutes.
    3. To make the salsa, combine all of the ingredients and mix well.
    4. Serve the cooked chicken with the avocado salsa.

    Ingredients
