  • Preheat grill to medium-high.
  • In a bowl, combine all the ingredients for the pineapple salsa, season to taste, and refrigerate.
    1 cup pineapple, 1 cup bell peppers, 1 cup Roma tomatoes, ¼ cup cilantro, ¼ cup red onion, Juice of 1 lime, ¼ cup fresh pineapple juice, 1 jalapeno, Sea salt and freshly ground black pepper
  • Coat the fish fillets with the cajun spices.
    4 firm white fish fillets, 2 tbsp. cajun spices
  • Cook the fish for 4 to 5 minutes per side or until the fish can be easily flaked with a fork.
  • Serve the fish topped with pineapple salsa.
