Caramelized Onion and Bacon Pork Chops Recipe

There is something irresistible about the aroma of onions slowly caramelizing in your best skillet, only to top your baked pork chops with them.

  • Preheat oven to 375 F.
  • Season the pork chops to taste with sea salt and freshly ground black pepper.

  • Heat the cooking fat in a skillet over medium-high heat.

  • Brown the pork chops in the skillet for about 2 minutes per side and transfer to a baking dish.
  • Place in the oven and bake for 18 to 20 minutes.
  • Cook the bacon pieces in the skillet until cooked, about 4 to 5 minutes; remove from the pan, setting bacon grease aside.

  • Add the onions to the skillet and cook for 8 to 10 minutes, stirring frequently.

  • Drizzle the balsamic vinegar and give everything a good stir.

  • Add the bacon back to the skillet, and pour in the chicken stock.

  • Stir everything, and cook until most of the juice evaporates.
  • Serve the pork chops topped with the caramelized onion-bacon mixture.
