Salmon Florentine Recipe

An elegant Paleo take on the classic salmon with spinach: special enough for a fancy dinner, but so simple you can even use frozen vegetables.

  • Preheat your oven to 350 F.
  • Heat the coconut oil in a skillet placed over medium heat.

  • Add the shallots and cook until soft, about 3 minutes, stirring occasionally.

  • Add the garlic and cook for another minute. Add the spinach, sun-dried tomatoes, and pepper flakes. Cook for another 2 to 3 minutes and season to taste.
    10 oz. fresh spinach, 4 garlic cloves, 5 sun-dried tomatoes, ¼ tsp. red pepper flakes
  • Remove the vegetables from the heat and set aside.
  • Season with salt and pepper each salmon filet to taste and line them up in a baking dish.
    4 skinless salmon fillets, Sea salt and freshly ground black pepper to taste
  • Top each filet with the spinach mixture and place in the oven.
  • Bake for 15 to 20 minutes or until the fish is just cooked through.
