Preheat your BBQ or grill to medium high.
In a bowl, combine all the ingredients for the creole seasoning.
2 tbsp. paprika, ½ tbsp. garlic powder, ½ tbsp. onion powder, ½ tbsp. cayenne or chili powder, ¼ tbsp. dried oregano, ¼ tbsp. dried thyme
In a large bowl, combine the shrimp, zucchini pieces, and sausage pieces, and cover them with olive oil.
½ lb. the raw shrimp, ½ lb. sausage, 2 zucchini, 2 tbsp. extra-virgin olive oil
Pour the creole seasoning into the bowl and mix well until all the ingredients are covered.

Load the skewers up with alternating pieces of sausage, shrimp, and zucchini until they’re full.

Grill the skewers until the shrimp are well-cooked (6 to 8 minutes), and serve.
