In a skillet, brown chicken pieces with sliced onions and sliced mushrooms. Cook for about 8 minutes, or until the chicken is golden brown and the onions are translucent.
1 onion, 1 ½ cups mushrooms, 1 lb boneless chicken breast, 2 tablespoon cooking fat
Transfer the chicken and vegetables to a slow cooker. Add diced tomatoes, butternut squash cubes, minced garlic, salt, pepper, and bay leaves.

Stir ingredients together. Cook on Low heat for 6 to 7 hours.
Taste and adjust seasoning as needed by adding more salt and/or pepper.
