  • In a large skillet or Dutch oven, melt the cooking fat over medium heat. Brown the pork for 3 to 4 minutes until browned. Transfer the pork and onions to the slow cooker.
    3 tablespoon cooking fat, 1 ½ lbs pork shoulder
  • In the same skillet, add red wine to deglaze the pan, scraping the food bits from the bottom. Pour the liquid into the slow cooker.

  • To the slow cooker, add carrots, celery, onions, parsnips, broth, sage, oregano, paprika, salt, and pepper to taste. Pour in the broth. Stir the mixture, cover, and cook on low heat for 6 to 8 hours.
    5 carrots, 2 onions, 2 celery stalks, 4 cups parsnips, 4 cups chicken stock, 1 teaspoon dried sage, ¼ teaspoon dried oregano, ½ teaspoon paprika
  • Taste and adjust seasoning if needed before serving.
    Salt and black pepper

Notes

  • Adjust seasoning to your own preferences.
  • Use pork shoulder, pork butt, pork roast, pork steaks, or pre-cubed pork stewing meat.
  • Can be refrigerated for up to 4 days, or frozen for up to 3 months.
