Add the bacon to a skillet and cook over medium heat until crispy.

Set the bacon aside and discard any excess bacon fat, reserving 2 tablespoon in the skillet.
Reduce heat to low and add the onion to the skillet; cook 8 to 10 minutes, stirring occasionally.

Pour in the raw honey and cook another 10 to 12 minutes, stirring until caramelized.

Drizzle in the balsamic vinegar and cook, stirring every 4 to 5 minutes, for another 15 to 20 minutes.

Add in the bacon, toss everything, and cook another 4 minutes.
