Ingredients

  • 16 slices bacon
  • 2 large peaches halved, pitted and each half cut into 4 wedges
  • 16 fresh basil leaves
  • Cooking fat
  • Balsamic vinegar to taste for drizzling
  • Freshly ground black pepper to taste

Instructions

  • Place the bacon slices flat on a working surface and place 1 peach wedge at one end of each slice.

  • Season to taste with freshly ground black pepper, add 1 basil leaf and roll the bacon over the peach and basil leaf.

  • Heat a large skillet over a medium-low heat and fry the wrapped peaches in a bit of your favorite cooking fat, turning often, until the bacon is crispy, about 4 minutes.
