- Begin by preheating your oven to 350°F. 
- Next, cook the pork medallions in 1 tablespoon of cooking fat on medium-high heat for approximately 4 minutes on each side, or until well cooked. - 2 tablespoon cooking fat, 1 ½ lb pork tenderloin 
- After setting the pork aside, cook the carrots, mushrooms, and onions in the remaining cooking fat for about 5 minutes on medium heat. - 1 cup carrots, 1 cup mushrooms, 1 cup onions 
- In a casserole dish, mix the coconut milk with thyme, cinnamon, and black pepper. Add the cooked vegetables, cooked pork, and quartered apples to the casserole dish. - 22.5 oz full-fat coconut milk, 1 tablespoon fresh thyme, ¼ teaspoon ground cinnamon, ⅛ teaspoon ground black pepper, 2 red apples 
- Place the dish in the oven and bake for 30 minutes until the dish is hot and ready to serve.
