Ingredients

  • 8 plum tomatoes seeded, quartered and sliced thinly
  • 1 red onion quartered and sliced thinly
  • 1 cup fresh basil roughly chopped
  • ½ cup flat-leaf parsley roughly chopped
  • cup extra-virgin olive oil
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Simply toss everything well together in a serving bowl and season to taste with sea salt and freshly ground black pepper. You might need more or less olive oil, judge it by taste.
