Bell Pepper Sauce

Ingredients

  • 2 red bell peppers seeded and chopped
  • 3 tablespoon cooking fat
  • 1 cup water
  • 1 sprig of fresh thyme
  • ½ cup coconut milk

Instructions

  • Heat 1 tablespoon of the cooking fat in a saucepan and sweat the bell peppers until slightly soft.

  • Add the water and the thyme sprig, bring to a simmer and simmer for 15 to 20 minutes, uncovered.
    1 cup water, 1 sprig of fresh thyme
  • Remove the thyme sprig and transfer the mixture to a blender to process to a smooth puree.
  • Pass the sauce through a strainer back into the saucepan.
  • Reheat the sauce and add the rest of the cooking fat and the coconut milk. Season to taste with salt and pepper.
