Bell Pepper Sauce
This Bell pepper sauce is a culinary chameleon that can elevate the health and flavor of any meal it touches.

- 2 red bell peppers seeded and chopped
- 3 tablespoon cooking fat
- 1 cup water
- 1 sprig of fresh thyme
- ½ cup coconut milk
Heat 1 tablespoon of the cooking fat in a saucepan and sweat the bell peppers until slightly soft.

Add the water and the thyme sprig, bring to a simmer and simmer for 15 to 20 minutes, uncovered.

Remove the thyme sprig and transfer the mixture to a blender to process to a smooth puree.
Pass the sauce through a strainer back into the saucepan.
Reheat the sauce and add the rest of the cooking fat and the coconut milk. Season to taste with salt and pepper.
