Blackberry and Honey Omelet

Ingredients

  • 8 eggs
  • 2 tablespoon water
  • 4 tablespoon butter ghee or coconut oil, divided
  • 1 cup fresh blackberries
  • 4 teaspoon honey
  • Sea salt to taste

Instructions

  • Whisk the eggs in a bowl with the water and season to taste with sea salt.

  • Heat a non-stick skillet over a medium heat, add 1 tablespoon of the cooking fat and pour ¼ of the egg mixture into the skillet.

  • Use a spatula to stir the omelet gently while it cooks and to allow uncooked parts to run underneath.
  • When the omelet is set, reduce the heat to low, place ¼ of the black berries on half of the omelet.
    1 cup fresh blackberries
  • Drizzle 1 teaspoon honey on top, fold the omelet in half over the black berries and cook for another minute, covered.

  • Reserve and repeat the process for the other omelets.
