  • Fry the sausage meat in a large frying pan with some cooking fat. Set aside and reserve.
    ½ lb spicy sausage, Cooking fat
  • Add some cooking fat to the pan and fry the mushrooms, onion, bell pepper and jalapeno pepper until the mushrooms are browned.
    ⅓ cup sliced mushrooms, ½ onion, ½ medium bell pepper, Cooking fat, 1 Jalapeno pepper
  • Whisk the eggs in a bowl with the water, mustard and the spices. Season to taste with sea salt and freshly ground black pepper.
    8 eggs, 2 tablespoon water, 1 tablespoon Dijon or homemade mustard, 1 pinch cayenne pepper, Sea salt and freshly ground black pepper to taste, ¼ cup green onions
  • Pour the egg mixture over the vegetables in the pan and add back the fried sausage meat. Gently stir until the top is nearly set.
  • Fold the omelet in half and cook, covered, for another minute.
