Fry the sausage meat in a large frying pan with some cooking fat. Set aside and reserve.

Add some cooking fat to the pan and fry the mushrooms, onion, bell pepper and jalapeno pepper until the mushrooms are browned.
⅓ cup sliced mushrooms, ½ onion, ½ medium bell pepper, Cooking fat, 1 Jalapeno pepper
Whisk the eggs in a bowl with the water, mustard and the spices. Season to taste with sea salt and freshly ground black pepper.
8 eggs, 2 tablespoon water, 1 tablespoon Dijon or homemade mustard, 1 pinch cayenne pepper, Sea salt and freshly ground black pepper to taste, ¼ cup green onions
Pour the egg mixture over the vegetables in the pan and add back the fried sausage meat. Gently stir until the top is nearly set.
Fold the omelet in half and cook, covered, for another minute.
