Chermoula Wet Rub

Ingredients

  • 1 teaspoon ground cinnamon
  • 1 teaspoon sweet paprika
  • 1 tbs ground coriander
  • 1 tbs ground cumin
  • Large pinch saffron threads
  • Juice of 1 lemon
  • 1 cup very finely chopped coriander
  • cup very finely chopped flat-leaf parsley
  • ¼ cup olive oil
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Combine all the ingredients in a food processor and process to form a paste. Season to taste with sea salt and freshly ground black pepper.
