Dark Chocolate Covered Bacon

Ingredients

  • 2 lbs thickly sliced bacon cut in half
  • 1 lb good quality dark chocolate
  • 4 tablespoon coconut oil butter or ghee

Instructions

  • Fry the bacon until crisp in a hot pan. Fry in batches if your pan is too small to contain all the bacon slices at once.

  • Remove the bacon from the pan and pat dry with a paper towel. Keep the rendered bacon grease for future cooking.
  • Slowly melt the chocolate in a pot with the coconut oil, butter or ghee.
    1 lb good quality dark chocolate, 4 tablespoon coconut oil
  • Using tongs, dip the bacon slices in the chocolate.
  • Place the chocolate dipped bacon on a cooling rack placed over foil or parchment paper.
  • Let cool for about 2 hours, until the chocolate has hardened.
  • Serve right away or store in a container in the refrigerator.
