- Preheat a grill to medium-high heat. 
- In a bowl, combine the orange juice, lemon juice, ginger, and olive oil. - 1 tbsp. fresh ginger, Juice from 1 orange, 2 tbsp. fresh lemon juice, 2 tbsp. olive oil 
- Thread alternating orange slices and scallops onto the skewers. - 12 sea scallops, 1 navel orange, Wood or metal skewers 
- Season the skewers to taste with sea salt and ground pepper. - Sea salt and freshly ground black pepper 
- Brush the skewers with the orange juice sauce. 
- Grill the skewers for 2 to 3 minutes on each side, basting with the sauce constantly. 
- Serve on a bed of lettuce.
