  • Heat a large frying pan over a medium heat and cook the onion and garlic in cooking fat until the onion starts to brown, about 7 minutes.

  • Season the liver slices to taste with salt and pepper and add them to the frying pan. Fry on both sides until just browned.

  • Pour in the chicken stock, bring to a boil and reduce to a simmer to then simmer for 10 to 15 minutes.

  • Stir in the orange slices, adjust the seasoning if needed and serve, garnished with the snipped chives.
