Mint Sauce

Crush the mint leaves with a pestle in a mortar with the sea salt.
¼ lb fresh mint, 1 teaspoon sea salt
Leave for 30 minutes, by which time the salt will have extracted most of the water from the mint.
Add the vinegar and pound again with the pestle. Add more vinegar if a thinner sauce is desired.
