- Preheat oven to 425 F. 
- In a bowl, combine the ketchup, chicken stock, garlic, apple cider vinegar, and coconut aminos. - 2 tbsp. homemade ketchup, ¼ cup chicken stock, 2 garlic cloves, 2 tsp. apple cider vinegar, 2 tbsp. coconut aminos 
- Season the pork chops to taste with salt and pepper. - 4 pork chops, Sea salt and freshly ground black pepper 
- Pour the mixture over the pork chops, making sure they are well covered. 
- Drizzle the avocado oil over the sweet potatoes and broccoli, and season to taste. - 2 sweet potatoes, 2 cups broccoli florets, 2 tbsp. avocado oil, Sea salt and freshly ground black pepper 
- Place the pork chops in a baking dish and surround it with the sweet potatoes and broccoli. 
- Bake in the oven for about 20-25 minutes, depending on the thickness, or until the pork is cooked through and the sweet potatoes are soft. Pork is done when the temperature reaches 145 F.
