Paleo Omelet Muffins

Ingredients

  • 6 eggs
  • ½ cup cooked ground meat or bacon
  • ½ cup diced green bell peppers
  • cup mayonnaise
  • cup water
  • Sea salt and freshly ground black pepper to taste
  • Cooking fat

Instructions

  • Preheat your oven to 350 F.
  • Grease 6 muffin tins with cooking fat.

  • Beat the eggs in a bowl and add the ground meat or bacon, bell peppers, water, mayonnaise and season to taste with sea salt and freshly ground black pepper. Combine well.

  • Scoop the mixture evenly in the 6 muffin tins and bake in the middle of the oven for about 18 minutes, until a knife inserted in the muffins comes out almost clean.
  • Remove from the oven, let cool a bit, remove from the tin and enjoy or store in the refrigerator for later.
