Ingredients

  • 2 oranges peeled and segmented
  • 2 teaspoon hot sauce
  • ¼ cup + 1 tablespoon extra-virgin olive oil
  • 2 tablespoon fresh mint chopped
  • 24 large raw shrimp peeled and deveined
  • 4 tablespoon lime juice
  • 1 cup cherry tomatoes halved
  • ½ onion thinly sliced
  • ¼ cup cilantro chopped
  • A pinch of dried oregano
  • 2 avocados cut into wedges
  • Cooking fat
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Combine together 1 tablespoon of the lime juice in a bowl with 1 tablespoon olive oil and 1 teaspoon hot sauce.
    ¼ cup + 1 tablespoon extra-virgin olive oil, 4 tablespoon lime juice, 2 teaspoon hot sauce
  • Add the mint and the shrimp and mix everything well.

  • In another bowl combine the remaining 3 tablespoons lime juice with the remaining ¼ cup olive oil and 1 teaspoon hot sauce.

  • Stir in the cherry tomatoes as well as the avocados, onion, cilantro, oregano and orange segments.

  • Heat your BBQ grill or a grill pan over high heat and cook the shrimp until just cooked through, about 2 minutes per side.

  • Serve the hot shrimp over the salad in bowls.
