Ingredients

  • ½ cup smoked salmon flaked
  • 1 tablespoon fresh dill minced
  • 3 eggs
  • 2 tablespoon coconut milk
  • 1 tablespoon cooking fat
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Whisk the eggs in a bowl, add the fresh dill and season to taste with sea salt and freshly ground black pepper.

  • Heat a non-stick skillet over a medium heat, add 1 tablespoon cooking fat and pour the egg mixture into the skillet.

  • When the omelet is set, add the flaked smoked salmon, fold the omelet in half over the salmon and cook for another minute, covered.
