Heat the cooking fat in a skillet over a medium heat and add the cumin seeds until they crackle and you can smell the aroma, just about 30 seconds.

Add the onion slices, the turmeric and sea salt to taste and cook until soft and golden, about 8 minutes.

Add the garlic, half the ginger, the red chilies and the sesame seeds and cook for another minute.
4 dried red chilies, 1 grated garlic clove, 1- inch piece of fresh ginger, 2 teaspoon sesame seeds
At this point, add the cauliflower, stir to combine, cover and cook on a medium-low heat for about 4 minutes, until tender.

Uncover, set the heat back to medium or medium-high and add the Jalapeno and remaining ginger. Season again to taste.

Serve garnished with fresh cilantro or basil and some extra sesame seeds.
