Tuna Salad with Apple and Orange
The combination of flavors in this tuna salad with apple and orange is a testament to the creativity and robustness of the Paleo diet.

- 2 red apples cored and sliced
- 2 cans tuna
- 1 orange segmented and segments cut in half
- ¼ cup homemade mayonnaise
- ½ tablespoon lemon juice
- ½ cup walnuts chopped
- Sea salt and freshly ground black pepper to taste
- Prepare the dressing by mixing the lemon juice with the mayonnaise and seasoning to taste with sea salt and freshly ground black pepper to taste; - ¼ cup homemade mayonnaise, ½ tablespoon lemon juice, Sea salt and freshly ground black pepper to taste 
- Combine the lettuce, apples, orange and tuna in a bowl and mix in the dressing. - 1 small Boston lettuce, 2 red apples, 1 orange, 2 cans tuna 
- Serve garnished with chopped walnuts. - ½ cup walnuts
