White Butter Sauce

Ingredients

  • 2 small onions finely chopped
  • 3 tablespoon white wine vinegar
  • 4 tablespoon white wine
  • 2 tablespoon cold water
  • 14 tablespoon good quality unsalted butter or ghee
  • A squeeze of lemon juice
  • Sea salt and freshly ground black pepper to taste

Instructions

  • Bring the wine vinegar and white wine to a boil with the onions in a small saucepan.

  • Lower the heat and simmer the liquid until only about 1 tablespoon of liquid remains, about 2 minutes.
  • Now over a very low heat, whisk in the water and then the butter, in small parts, making sure to whisk them in well to create the emulsion.
    2 tablespoon cold water, 14 tablespoon good quality unsalted butter or ghee
  • Season with sea salt and freshly ground black pepper to taste and add a squeeze of lemon juice. Serve while hot.
