Chicken with Apples and Cranberries Recipe
When chicken breasts take a bath in chicken stock and coconut milk with dried cranberries, apples, shallots, and thyme, the results are perfectly seasonal.

Melt cooking fat in a skillet over medium-high heat.

Brown the chicken breasts for 2 to 3 minutes per side, then set aside.

Cook the shallots in the skillet until soft, about 2 to 3 minutes.

Pour in the chicken stock, bringing it to a boil, and scrape the bottom of the pan at the same time.

Place the chicken back in the skillet, add all the remaining ingredients, and season to taste.
