Slow Cooker Beef With Mushroom-Onion Sauce Recipe

From out of the slow cooker emerges a tender beef roast worthy of royalty, complete with a mushroom-onion-coconut milk sauce and all. The end.

  • Melt cooking fat in a skillet over medium-high heat.
    2 tbsp. cooking fat
  • Brown the beef on all sides, about 2 minutes per side.
    2 lb. beef roast
  • Place the beef in a slow cooker.
  • Add the diced onion, mushroom, and garlic to the skillet and cook for 2 to 3 minutes.
    8 oz. mushrooms, 1 onion, 2 garlic cloves
  • Pour the beef stock into the skillet and bring to a light simmer.

  • Add the onion flakes, oregano, and celery seed, and season generously.
    2 tbsp. onion flakes, 1 tbsp. dry oregano, ¼ tsp. celery seed, Sea salt and freshly ground black pepper
  • Pour in the coconut milk, whisk everything, and pour over the beef in the slow cooker.

  • Cover and cook on low for 7 to 8 hours.
