Preheat oven to 375 F.
Melt ghee in a skillet over medium-high heat; add the onion and garlic; cook for 1 to 2 minutes.
1 small red onion, 2 tbsp. ghee, 2 garlic cloves
Crumble the sausage in the skillet, and cook for 2 to 3 minutes.
1 lb. turkey or pork sausage
Add the celery and cauliflower; keep cooking, stirring for 3 to 4 minutes longer.
1 cup cauliflower, 2 celery stalks
Pour the mixture into a bowl and let cool.
Add the remaining ingredients and season to taste; give everything a good mix and place in a baking dish.
8 oz. mushrooms, ½ cup dried cranberries, 1 egg, 1 tbsp. fresh thyme leaves, 1 tbsp. fresh parsley, 1 tbsp. fresh sage leaves, 1 tbsp. rosemary, Sea salt and freshly ground black pepper
Bake in the preheated oven for 20 to 25 minutes.
Alternatively, you can mix all the uncooked ingredients in a bowl, season to taste, and stuff inside a turkey or a duck for the entire cooking time of the bird.
