- Preheat oven to 375 F. 
- Melt ghee in a skillet over medium-high heat; add the onion and garlic; cook for 1 to 2 minutes. - 1 small red onion, 2 tbsp. ghee, 2 garlic cloves 
- Crumble the sausage in the skillet, and cook for 2 to 3 minutes. - 1 lb. turkey or pork sausage 
- Add the celery and cauliflower; keep cooking, stirring for 3 to 4 minutes longer. - 1 cup cauliflower, 2 celery stalks 
- Pour the mixture into a bowl and let cool. 
- Add the remaining ingredients and season to taste; give everything a good mix and place in a baking dish. - 8 oz. mushrooms, ½ cup dried cranberries, 1 egg, 1 tbsp. fresh thyme leaves, 1 tbsp. fresh parsley, 1 tbsp. fresh sage leaves, 1 tbsp. rosemary, Sea salt and freshly ground black pepper 
- Bake in the preheated oven for 20 to 25 minutes. 
- Alternatively, you can mix all the uncooked ingredients in a bowl, season to taste, and stuff inside a turkey or a duck for the entire cooking time of the bird.
