  • Place the chicken drumsticks in a large bowl. Add the garlic, ginger, parsley, chives, cumin, paprika, coriander, red pepper flakes, and olive oil, and season to taste with salt and pepper.
    2 ½ lbs. chicken drumsticks, 3 garlic cloves, 2 tsp. fresh ginger, ¼ cup fresh parsley, ¼ cup fresh chives, 2 tsp. ground cumin, 2 tsp. paprika, ½ tsp. ground coriander, ¼ tsp. crushed red pepper flakes, ¼ cup extra virgin olive oil, Sea salt and freshly ground black pepper
  • Toss everything together until well coated, and cover.
  • Refrigerate and marinate for 2 to 8 hours.
  • Preheat the grill to medium-high heat.
  • Grill the marinated chicken until cooked through, turning every 4 to 5 minutes.
  • Let the drumsticks rest for 2 to 3 minutes before serving.
