Coffee-Flavored Chocolate Mousse Recipe

A simple and delicious Paleo dessert with coffee, dark chocolate and coconut milk as the main ingredients. Makes for a great Paleo indulgence.

Ingredients

  • ¼ cup dark chocolate chips or ¼ cup dark chocolate squares
  • ½ cup coconut milk
  • 1 tablespoon ground coffee beans
  • ¼ cup boiling water
  • 1 tablespoon vanilla extract
  • ¼ teaspoon flavored extract almond, mint, coffee, etc.

Instructions

  • In a medium skillet over low heat, melt the chocolate. Stir frequently to prevent the chocolate from burning. Add in the coconut milk and whisk together until blended.
    ¼ cup dark chocolate chips or ¼ cup dark chocolate squares, ½ cup coconut milk
  • In a small bowl, mix the hot water with the ground coffee beans.

  • Combine the melted chocolate, coffee mixture, vanilla extract, and flavored extract.
    1 tablespoon vanilla extract, ¼ teaspoon flavored extract
  • Pour the mixture into 4 small dessert dishes or two larger ones. Espresso cups are the perfect size to make 4 servings.
  • Place in the refrigerator for 2 to 3 hours, or even overnight, to allow them to become firm. Bon appétit!
