- Cut the cucumbers and carrots into thin strips using a mandoline, spiralizer, or knife. - 2 cucumbers, 3 carrots 
- In a bowl, whisk the olive oil, white wine vinegar, and lime juice, and season with freshly ground black pepper to taste. - 2 tbsp. white wine vinegar, 2 tbsp. fresh lime juice, 2 tbsp. extra-virgin olive oil, Freshly ground black pepper 
- In a salad bowl, combine the cucumbers, carrots, and green onion. - 1 green onion 
- Pour the dressing on top, and toss gently.
