- Melt coconut oil in a skillet over medium-high heat. - 2 tbsp. coconut oil 
- Add the garlic and onion; cook for 1 to 2 minutes. - 2 garlic cloves, 1 onion 
- Add the ground beef and cook until brown, about 4 to 5 minutes. - 1 lb. ground beef 
- Add the bell pepper, zucchini, and diced tomatoes. - 1 large bell pepper, 2 zucchinis, 1 cup diced tomatoes 
- Mix in the taco seasoning and season to taste with salt and pepper; cook another 5 to 6 minutes or until vegetables are soft. - 2 tbsp. taco seasoning, Sea salt and freshly ground black pepper 
- Add in the spinach, stirring for 2 to 3 minutes or until the spinach is wilted. - 2 cups fresh spinach
