- Melt some cooking fat in a skillet placed over medium-high heat. - Cooking fat 
- Season the chicken with chili powder, sea salt, and black pepper. - ½ lb. chicken breast, Sea salt and freshly ground black pepper to taste, 1 tsp. chili powder 
- Cook the chicken breast in the warm skillet until it’s browned and cooked through (about 5 minutes per side). Take it out of the pan and let it cool down then cut it into cubes. 
- In a large bowl, combine all the remaining ingredients and mix well. - ¼ cup bell pepper, ¼ cup red onions, 1 mango, 1 cup celery, ⅓ cup homemade mayonnaise, Juice of ½ lime, 1 tbsp. minced garlic 
- Season to taste and refrigerate for 1 or 2 hours before serving. - Sea salt and freshly ground black pepper to taste 
- Garnish with fresh cilantro to serve. - Fresh cilantro
