- Melt cooking fat in a skillet over medium-high heat. - 2 tbsp. cooking fat 
- Brown the beef on all sides, about 2 minutes per side. - 2 lb. beef roast 
- Place the beef in a slow cooker. 
- Add the diced onion, mushroom, and garlic to the skillet and cook for 2 to 3 minutes. - 8 oz. mushrooms, 1 onion, 2 garlic cloves 
- Pour the beef stock into the skillet and bring to a light simmer. - 1 cup beef stock 
- Add the onion flakes, oregano, and celery seed, and season generously. - 2 tbsp. onion flakes, 1 tbsp. dry oregano, ¼ tsp. celery seed, Sea salt and freshly ground black pepper 
- Pour in the coconut milk, whisk everything, and pour over the beef in the slow cooker. - 1 cup coconut milk 
- Cover and cook on low for 7 to 8 hours.
