- Heat the coconut oil in a skillet over medium-high heat. - 2 tbsp. coconut oil 
- Cook the sausages until browned, about 4 to 5 minutes. - 4 pork sausages 
- Add the onion, bell pepper, mushrooms, and garlic, and cook for another 2 minutes. - 1 onion, 1 bell pepper, ½ cup mushrooms, 2 garlic cloves 
- Pour in the coconut milk and chicken stock, and stir well for 1 to 2 minutes longer. - ½ cup coconut milk, 1 cup chicken stock 
- Add in the zucchini noodles and cook until the zucchini is nice and soft about 4 to 5 minutes. - 4 zucchinis 
- Season to taste and sprinkle with fresh parsley before serving. - 2 tbsp. fresh parsley, Sea salt and freshly ground black pepper
