    Calf’s Liver with Lime and Sage

    Beyond its bold flavors, calf's liver offers a treasure trove of nutrients pivotal for a well-tuned body. Rich in iron, protein, and essential vitamins, this organ meat supports muscle growth, boosts energy levels, and aids in the healing and repair of the body. By introducing lime and sage, not only do we amplify its taste profile, but we also infuse the dish with an extra layer of nutritional benefits. Lime adds a burst of vitamin C, enhancing iron absorption, while sage offers anti-inflammatory and antioxidant properties.

    No culinary symphony is complete without the harmonious notes of its ensembles. While the calf's liver with lime and sage stands alone in its robust countenance, pairing it with the right sides can elevate the dining experience to a crescendo. My favorite pairings are Creamy Mashed Cauliflower or Creamed Spinach.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 5 minutes

    • 8 thin slices calf liver
    • 12 fresh sage leaves
    • Juice of 1 lime
    • Cooking fat
    • Sea salt and freshly ground black pepper to taste

    How to Make Calf’s Liver with Lime and Sage

    Season the liver slices to taste with sea salt and freshly ground black pepper.

    Heat a large skillet over a medium heat and fry the liver slices in with some cooking fat until just cooked, about 2 minutes per side.

    Add the whole sage leaves and cook for another minute while stirring.

    Serve with a squeeze of the lime juice on top.
