    Basil and Tomato Salad

    Whether you're a health-conscious epicurean or a devoted paleo enthusiast, the effortless fusion of these tomato and basil in a salad not only tantalizes the taste buds but also boasts a myriad of nutritional benefits. From Italy's Caprese salad to Thailand's spicy Yum Ta-ma-daa, these two ingredients transcend borders and cultural barriers, symbolizing summertime, health, and the simple pleasures of life.

    This simple salad is perfect alongside Blackened Tilapia or Aromatic Spice Grilled Chicken.

    Ingredients

    Serves: 8 Prep Time: 10 minutes

    • 8 plum tomatoes, seeded, quartered and sliced thinly
    • 1 red onion, quartered and sliced thinly
    • 1 cup fresh basil, roughly chopped
    • ½ cup flat-leaf parsley, roughly chopped
    • â…“ cup extra-virgin olive oil
    • Sea salt and freshly ground black pepper to taste

    How to Make Basil and Tomato Salad

    Simply toss everything well together in a serving bowl and season to taste with sea salt and freshly ground black pepper. You might need more or less olive oil, judge it by taste.
