    Braised Beef Heart

    Within the culinary world, there’s a quiet revolution afoot—one that champions a more holistic approach to cooking, one that does not shy away from the less conventional, often overlooked ingredients. Today, food enthusiasts, health devotees, and eco-conscious consumers are rediscovering the forgotten art of offal cuisine. Braised beef heart stands at the forefront, a humble yet formidable contender in the world of gastronomy.

    Pairing braised beef heart with classic sides like Creamy Mashed Cauliflower or Roasted Vegetables elevates the everyday meal to an experience that lingers in the memory.

    Ingredients

    Serves: 6 Prep Time: 15 minutes Cook Time: 1 hour 30 minutes

    • 3 lbs beef heart (you might need 2 hearts)
    • 1 onion, chopped
    • 2 cups beef stock
    • 1 tablespoon paprika
    • 1 bay leaf
    • A pinch of cayenne pepper
    • 2 carrots, chopped into 1-inch pieces
    • 1 leek, washed carefully and chopped into 1-inch pieces
    • 2 celery stalks, chopped into 1-inch pieces
    • 1 celeriac, cut into 1-inch pieces
    • 1 can (12 oz.) tomatoes
    • Cooking fat
    • Sea salt and freshly ground black pepper to taste

    How to Make Braised Beef Heart

    Cut the heart in half and prepare it by cutting off any white fat on the surface as well as any arteries inside of it.

    Heat a pot or saucepan over a medium heat and fry the onion with the heart in some cooking fat until browned on all sides.

    Pour in the stock, paprika, bay leaf, cayenne pepper and season to taste with sea salt and freshly ground black pepper.

    Bring to a simmer and simmer, covered, for 1 hour.

    Add the vegetables except the tomatoes and simmer for another 15 minutes.

    Add the tomatoes and simmer for another 10 minutes.

    Discard the bay leaf and serve.
