    Minestrone Soup

    A confluence of seasonal vegetables, beans, a medley of herbs, and often pasta, this beloved dish is more than just a simple soup; it's a reflection of the beauty found in rustic simplicity and the quintessential comfort of home-cooked meals. From the bustling kitchens of Italian grandmothers to the innovative stovetops of modern-day food enthusiasts, Minestrone continues to play an integral role in nourishing both body and soul.

    A bowl of Minestrone, rich in history and flavor, beckons a complementary counterpart to enhance the dining experience. Curated food pairing options that promise to elevate your Minestrone meal to a realm of gastronomical delight include Sautéed Spinach and Caramelized Onions. For a lighter accompaniment, a Raw Kale Salad dressed in a light vinaigrette offers a crisp, clean contrast to the robust flavors of Minestrone.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 30 minutes

    • 2 tablespoon cooking fat
    • 5 slices bacon, cut into ¾-inch strips
    • 1 small onion, minced
    • 1 leek, minced
    • 1 celery stalk, minced
    • 2 carrots, minced
    • ¼ head of cabbage
    • 1 sweet potato, peeled and coarsely chopped
    • 3 tablespoon tomato paste
    • 6 cups chicken stock
    • 1 tablespoon chopped flat-leaf parsley
    • Sea salt and freshly ground black pepper to taste

    How to Make Minestrone Soup

    In a large saucepan, heat the oil and fry the bacon as well as all the vegetables except the cabbage and sweet potato. Fry until the vegetables start to soften.

    Add the cabbage, sweet potato and tomato paste, season with salt and pepper to taste and continue cooking on a low heat for about 10 minutes, stirring occasionally.

    Pour in the stock, bring to a simmer and let simmer for another 7 minutes.

    Add the parsley and rectify the seasoning if needed.
