Simplicity at its best: onions with their skins removed and baked for an hour until they reach golden perfection. It's the perfect side dish with little effort involved, so you can craft the rest of the meal or take a quick nap while the onions are roasting in the oven. In fact, this recipe is so simple that prep time is well under 10 minutes.
If your oven is large enough, you can prep a roast beef with portobello mushrooms and balsamic sauce an hour ahead of preparing the onions, and they will be hot and ready at the same time. Another option is to prepare a pork roast with Dijon glaze, which can go in the oven for half an hour before the onions.
You can take these land pearls up a notch by adding a sprinkle of your favorite dried herbs. May we suggest tarragon or thyme? You can fill up your baking pan with as many onions as will fit; twelve is certainly not the limit.
While you are at it, why not mix up both red and purple onions for the eye-candy appeal of color? This dish will look just as great on the buffet table at a wedding as at your next potluck. Easy, simple and they can be eaten by hand or with a fork and knife.
