Pork Stew with Squash and Apple
Comfort food to me is all about warmth and ease. This pork apple stew is a simple combination of flavors that is ideal for making and serving your family on busy weeknights or weekends. A slow cooking time gives you a deliciously rich broth and tender pork every time.
Serve this alone or with a side of paleo bread for a complete meal that everyone will be sure to devour.
Ingredients
Serves: 4 Prep Time: 20 minutes Cook Time: 40 minutes
- 1 ½ lbs pork shoulder
- 2 cloves garlic
- 1 onion
- 3 cups chicken stock
- ¼ teaspoon dried rosemary
- ¼ teaspoon dried sage
- 1 bay leaf
- 3 cups butternut squash
- 2 apples
- 2 cups carrots
- 3 tablespoon cooking fat
How to Make Pork Apple Stew
In a large skillet or Dutch oven, melt the cooking fat over medium-high heat. Add the pork to the pan and brown for 2 to 3 minutes.
Reduce the heat to low, and add in the onion and garlic. Cook this, stirring regularly, for 4 to 5 minutes, just until they are browning.
If using a skillet, transfer everything to a Dutch oven. Then, add in the broth, rosemary, sage, and a bay leaf. Season with salt and pepper, 1 teaspoon each to start, and cover. Simmer for 20 minutes.
Next, add in the apples, squash, and carrots. Simmer again, uncovered, for 20 minutes. Taste and add more salt and pepper if needed.
Remove the bay leaf before serving.

Pork Apple Stew with Butternut Squash
Ingredients
- 1 ½ lbs pork shoulder cubed
- 2 cloves garlic minced
- 1 onion chopped
- 3 cups chicken stock
- ¼ teaspoon dried rosemary

- 3 cups butternut squash cut into 1-inch cubes
- 2 apples cored and cut into cubes
- 2 cups carrots cut into 1-inch pieces
- 3 tablespoon cooking fat

- Use any prefered cut of pork such as pork shoulder, pork stewing meat, pork butt, or pork steaks.Â
