    Red Beet Soup

    Drawing in your taste buds with its deep earthy notes and vivaciously rich color, red beet soup is a culinary delight that embodies both health and taste. This humble soup finds its roots in the fertile farmlands of Eastern Europe but has now travelled across the globe, carving out a special place in the hearts – and bellies – of food lovers everywhere.

    Red beet soup is a robust experience on its own, but a well-selected side or companion dish can elevate the dining experience to new levels. A simple Fall Vegetable Salad can provide a refreshing counterpoint to the soup’s depth. For those seeking a heartier meal, consider pairing red beet soup with a Chicken Pot Pie for a variety of flavors and textures.

    Ingredients

    Serves: 4 Prep Time: 10 minutes Cook Time: 30 minutes

    • 3 tablespoon cooking fat
    • 1 chopped onion
    • 1 garlic clove, minced
    • 6 medium beets, peeled and chopped
    • 2 cups fresh chicken or beef stock
    • Full-fat coconut milk for garnishing
    • Sea salt and freshly ground black pepper to taste

    How to Make Red Beet Soup

    Heat the cooking fat in a large sauce pan and cook the onion and garlic for about 5 minutes, until soft. Add the chopped beets and cook for another minute.

    Stir the stock in, season with freshly ground black pepper and sea salt and bring to a boil. Reduce to a simmer and let simmer for about 25 minutes, until the beet cubes are tender.

    With a blender or food processor and operating in batches, process to the consistency of a puree.

    Serve in bowls and swirl a bit of coconut milk on top if desired.
