Even though this recipe seems difficult, this is actually a one-pot meal – once you’ve overcome the work of gathering and prepping your ingredients, this recipe is as simple as adding everything to the same pot at different intervals and waiting for your seafood to cook through.
This recipe, while spiced up just a bit, really relies on the flavors of the seafood to make the dish successful. This means locating and purchasing the highest-quality seafood for your area.
To be honest, not everyone should go with fresh seafood – depending on your location, imported fresh seafood might be significantly older and lower quality than what’s available frozen.
Go with whichever seems to work best, and if you’re lucky enough to live on the coast, definitely check out a local fisherman’s market for some of the best selections.
This is a great main course that doesn’t really need sides to work as a complete meal. If you are preparing this for a fancy dinner, try adding some Paleo-friendly desserts to the menu. For an adults-only meal, prep a pitcher of sangria for the table as well.
Seafood Zucchini Pasta Recipe
Serves: 4 Prep: 20 min Cook: 25 min
Ingredients
- 3 to 4 zucchinis, spiralized
- 15 to 20 clams
- 6 oz. sea scallops
- 6 oz. shrimp, peeled and deveined
- 6 oz. cooked crab meat
- 2 tomatoes, diced
- 1 bell pepper, diced
- 3 garlic cloves, minced
- 1 onion, diced
- 2 tbsp. fresh basil, minced
- 1 tsp. dried oregano
- ½ tsp. red pepper flakes
- ½ cup tomato sauce
- ½ cup fish stock
- 1-2 tbsp. cooking fat
- Sea salt and freshly ground black pepper
Preparation
- Melt cooking fat in a skillet over medium heat.
- Add the onion, bell pepper, and garlic and cook until fragrant, 4 to 5 minutes.
- Pour in the fish stock and bring to a boil.
- Add in the tomato sauce, diced tomatoes, basil, oregano, and chili flakes; season to taste with salt and pepper, and give everything a good stir.
- Let the sauce simmer for 5 to 8 minutes.
- Add the scallops, shrimp, and crab meat; cook for 4 to 5 minutes or until the shrimp redden.
- Add the spiralized zucchini and clams; cover and cook until clams open (6 to 8 minutes).
- Serve the pasta topped with fresh basil or parsley.
