    There's something heartening about soup. Perhaps it's the way it warms the soul with its steam, or the cozy feeling that wraps you up with every spoonful. But Thai chicken soup offers more than just comfort; it presents a medley of flavors that have been simmering for centuries, combining to create a dish often referred to as a 'healing elixir.'

    Thai Chicken Soup

    Before we ladle out the ingredients, it's vital to know that Thai chicken soup, or 'Tom Kha Gai,' is not just a recipe, but also a story, a tradition deeply rooted in the culture and climate of Thailand. The soup is part of the Thai culinary canon, celebrated for its complex yet harmonious blend of flavors - spicy, sour, salty, and sweet.

    Grilled Vegetables can add a smoky depth to the meal, complementing the soup's richness; alternatively, a Fruit Salad with Mint would make a fantastic partner for the heat of the soup.

    Ingredients

    Serves: 4 Prep Time: 15 minutes Cook Time: 30 minutes

    • 4 stalks lemon-grass, cut into ½-inch strips and bruised with a knife
    • 5 lime leaves, bruised with the side of a knife
    • 1 chicken leg
    • 2 cups water
    • 2 small chilies
    • 4 cups coconut milk
    • 3 scallions, minced
    • 2 tablespoon chopped cilantro
    • Juice of 3 limes
    • Sea salt and freshly ground black pepper to taste

    How to Make Thai Chicken Soup

    In a sauce pan, bring the water to a simmer and cook the chicken with the lemon-grass and limes leaves until just cooked, about 30 minutes.

    Remove the chicken, add the chilies to the liquid and dice the cooked chicken meat.

    Bring the water back to a simmering state and pour in the coconut milk.

    Heat the soup, but make sure it doesn’t reach the boil.

    Strain the soup in a new pot, add the cilantro, lime juice, cooked chicken and scallions. Season with sea salt and freshly ground black pepper to taste.
