    Almond Flour Pancakes

    In the realm of breakfast and brunch, pancakes hold a special place, offering a canvas of fluffy delight that's both versatile and universally loved. Transforming your breakfast into a nutrient-rich meal doesn't mean sacrificing taste or texture. Almond flour pancakes provide a satisfyingly fluffy and tender alternative to their classic counterparts, with the added benefit of being heart-healthy and diabetic-friendly.

    Top your almond flour pancakes with fresh berries, a dollop of Homemade Yogurt, or a drizzle of honey to enhance their natural flavor. Pair them with a Fresh Fruit Salad or a cup of herbal tea for a complete, nutritious meal.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 2 minutes

    • 1 cup almond flour
    • 2 eggs
    • ¼ cup water
    • 1 tablespoon honey
    • 1 teaspoon vanilla extract
    • A pinch of ground cinnamon
    • Coconut oil, butter or ghee for cooking
    • A pinch of salt

    How to Make Almond Flour Pancakes

    Combine the eggs, water, honey and vanilla extract in a bowl and whisk everything together.

    Add the almond flour, cinnamon and a pinch of salt and combine well.

    Heat a large pan over a medium heat, add a bit of coconut oil or butter to coat and pour â…› of the pancake batter, quickly turning the pan around to spread the pancake over the whole pan.

    Cook until brown on the underside, about 1 minute and then flip and cook for another minute on the other side.
