Baked Cabbage Casserole Recipe

Ingredients
- 2 lbs. (roughly equivalent to 1 medium head) mixed cabbage, blanched and roughly chopped
- 1.5 lbs. ground beef
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tbsp. tomato paste
- 1 cup tomatoes, diced
- 2 cups tomato sauce
- ¼ cup chopped parsley
- 1 ½ cups cauliflower, riced
- 2 tbsp. lemon juice
- Sea salt and freshly ground black pepper
Preparation
- Preheat your oven to 375 F.
- Heat a skillet over medium heat and brown the ground beef.
- Add onions and garlic and cook, frequently stirring, for 4 to 8 minutes.
- Add in the tomatoes, tomato paste, and tomato sauce, and stir well.
- Season to taste, and add the chopped parsley.
- Add the cauliflower rice, lemon juice, and chopped cabbage. Cook over a medium-low heat for about 10 minutes.
- Pour the mixture into a baking dish and bake for 45 minutes.
