Ingredients
- 4 firm white fish fillets
- 2 tbsp. cajun spices
- Sea salt and freshly ground black pepper
Pineapple Salsa Ingredients
- 1 cup pineapple, diced
- 1 cup bell peppers, diced
- 1 cup Roma tomatoes, diced
- ¼ cup cilantro, chopped
- ¼ cup red onion, diced
- Juice of 1 lime
- ¼ cup fresh pineapple juice
- 1 jalapeno, seeded and diced (optional)
- Sea salt and freshly ground black pepper
Preparation
- Preheat grill to medium-high.
- In a bowl, combine all the ingredients for the pineapple salsa, season to taste, and refrigerate.
- Coat the fish fillets with the cajun spices.
- Cook the fish for 4 to 5 minutes per side or until the fish can be easily flaked with a fork.
- Serve the fish topped with pineapple salsa.
