    Chicken Adobo Recipe

    Adobo got started as a way to preserve meats in vinegar (and there’s actually a lot of fascinating antimicrobial chemistry behind the traditional spices).

    Today we have refrigerators for that, but meat marinated in a mixture of vinegar and spicy seasonings and then cooked in the same liquid is still delicious, and skin-on chicken wings are a great contrast to the sharper heat of the sauce.

    Chicken Adobo

    This is an interesting new way to make chicken wings if you’re looking for something a little bit off the oven-baked path, and if you have kids at the table, the vinegar sauce is an easy way to cut down on the mess (it’s not nearly as sticky and smeary as BBQ or honey-mustard sauces).

    This recipe would be great over cauliflower rice or maybe some fried onions, but you could also use it to quickly dress up some frozen vegetables: the sauce from the chicken really helps add flavor and transform a bag of defrosted broccoli into something you can get excited about eating. If it can make frozen vegetables tasty, you know it has to be good!

    Chicken Adobo Recipe

    SERVES: 4 PREP: 15 min + 30 min COOK: 30 min

    Ingredients

    • 4 to 5 lbs. chicken wings
    • ¼ cup apple cider vinegar
    • â…“ cups coconut aminos
    • 1 cup water
    • 4 cloves garlic, crushed
    • A 1-inch piece fresh ginger, minced
    • 2 long red chilies, thinly sliced
    • 2 bay leaves
    • 2 tbsp. raw honey (optional)
    • 1 large onion, thinly sliced
    • Sea salt and freshly ground black pepper

    Preparation

    1. Combine the apple cider vinegar, coconut aminos, garlic, ginger, chilies, bay leaves, honey, onion, and water in a bowl and stir well.
    2. Season each chicken wing with sea salt and freshly ground black pepper to taste.
    3. Add the chicken to the vinegar mixture and marinate for 30 minutes at room temperature or longer in the refrigerator.
    4. Transfer the chicken and liquid to a saucepan and bring to a boil over high heat.
    5. Cover and simmer over medium heat for 30 to 35 minutes or until the chicken is cooked through.
    6. Remove the chicken wings and set aside.
    7. Simmer the sauce until reduced by half.
    8. Return the chicken to the pan, stir to combine, and serve.
